Burritos are a fantastic way to use up leftovers! We particularly like them with rice, although refried beans are a popular option. Add some cheese, jalapenos and some salsa for a delicious lunch or supper! You could also try this simple recipe with some leftover shredded chicken or baked sweet potato. serves 2
leftover slow-cooked beef
leftover mexican rice - find a simple recipe here
2 tortillas
cheddar or edam
chopped tomatoes and avocado
Warm through the rice and beef (this is where a microwave is so handy!)
Pile some grated cheese on a tortilla and microwave or grill until melted.
Add enough rice and beef to make a fat burrito, add some tomato and avocado and roll tightly.
Cut in half and serve with optional pico de gallo, sour cream and jalepenos!
